SANTA CRUZ - Now this is a ranking UC Santa Cruz can live with.
After spending a few years listed as one of the country’s top party
schools at least according to the Princeton Review an animal
rights group is giving UCSC top marks for its food.
UCSC ranked in the Top 10 among the nation’s colleges and
universities for serving vegan and vegetarian fare, according to an
online survey by the People for the Ethical Treatment of Animals.
The rankings was based on 4,000 votes and involved about 750
schools, the Virginia-based group said.
UCSC was cited for its vegan burgers, mock sausage, tofu
faux-turkey slices as well as its tofu scramble for breakfast.
“They just have a wealth of options,” PETA spokesman Jay Kelly said.
PETA named the College of the Atlantic in Bar Harbor, Maine, as this
year’s “Veggie Valedictorian.” UCSC ranked eighth.
Also in the Top 10 were New York University, Syracuse University,
the University of Maryland, Indiana University, Virginia Tech, Lewis
and Clark College, Hampshire College and Bryn Mawr College.
PETA said the number of vegetarians on college campuses represents
about 20 percent of the enrollment.
Kelly said the group even gets inquiries from high school students
about the vegetarian and vegan food offerings at colleges the
students are considering.
“Vegetarian offerings keep growing because of the demand,” he said.
